Preparation Time:
10 Minutes

Ingredient

Ghee 1-2 tablespoons for frying

½ cup Buckwheat flour

¼ tsp baking powder

¼ tsp baking soda

¼ cup water

2 tbsp milk or use your preferred milk alternative

2 teaspoons apple cider vinegar

¼ tsp pure vanilla extract

½ tsp maple syrup

Step 1

In a mixing bowl, mix the flour, baking powder, baking soda, and pure vanilla extract. Make a well in the centre

Step 2

Whisk together milk, vinegar, water, and vanilla. Pour into the well in the centre of dry ingredients. Whisk until it forms a smooth, slightly thick batter with no lumps.

Step 3

Warm a pancake pan over medium heat with a little ghee or coconut oil. Pour ¼ cup of batter onto a warm, oiled pan. If needed, use the back of a spoon to gently spread it into a perfect round shape

Step 4

Cook for a few minutes, until bubbles form on top and the edges appear set and dry. Then, carefully slide a spatula under and flip the pancake. Cook for another 30 seconds on the other side or until firm.

Step 5

Serve immediately or let them cool on a rack while you cook the remaining batter. This recipe makes approximately 4-6 pancakes

Step 6

Enjoy with your favourite toppings, such as maple syrup, fresh berries, or banana slices
