Ingredient
⅓ cup ghee, butter or coconut oil, melted and cooled
⅓ cup granulated sugar or coconut sugar, plus more for topping
1 egg
1 tsp vanilla extract
1½ cup blanched almond flour
3 tbsp coconut flour
¼ tsp baking soda
¼ tsp sea salt
1-2 tbsp chai tea
Step 1
Preheat oven to 180 degrees , and line a baking tray with parchment paper.
Step 2
In a large mixing bowl, stir together butter, sugar, egg, and vanilla extract.
Add in almond flour, coconut flour, baking soda, and salt. add the chai tea. Stir together until a dough forms.
Step 3
Use your hands to roll the dough into 12 balls, about 1½ inch in diameter. Drop them on the baking sheet 2-3 inches apart and use your hands to flatten them to about ½ inch.
Step 4
Sprinkle with more sugar on top, then bake for 10-12 minutes. Remove from the oven and cool for 10 minutes before transferring them to a cooling rack to cool completely.
