Chai Latte

Ingredient
½ cup of Water
½ inch piece of Ginger
2x Green Cardamom pods
1x Black Cardamom pods
3x Cloves
1 tsp of Fennel Seeds
½ tsp of Ajwain seeds
1 stick of Cinnamon
1 tsp of raw sugar
1 cup of milk (Preferably Non-Homogenised, or use your preferred milk alternative)
Step 1
Add water and freshly grated ginger to a small saucepan, place over heat and bring to a boil.
Step 2
Lightly crush the whole spices using a mortar and pestle to release their aroma. Add the crushed spices to the water and continue to boil.
Step 3
Stir in the sugar, then add tea leaves or tea bag and let the mixture return to a boil.
Step 4
Pour in the milk and bring the mixture back to a boil. Reduce the heat and let it simmer for 1-3 minutes. Strain and serve hot.
