This Kitchari recipe is easy to make and super healthy. Incorporating it into your diet will help with your gut health, digestion, and inflammation, among other things. Kitchari is a cornerstone of the Ayurvedic diet. Traditionally made with basmati rice and mung dal, a split form of whole mung beans, this nourishing dish combines these wholesome ingredients with healing vegetables and an array of spices. Known for its balancing effects on all three doshas, kitchari is a comforting staple in Ayurvedic living, offering nourishment for the body, mind, and soul.

Ingredients
1 tbsp Ghee
2 tsp spice mix
1-2 inches fresh ginger & garlic, grated or sliced
1.5 cups of vegetables, carrot, green beans, zucchini
½ cup split mung dal
½ cup basmati rice
1.5 cups water, vegetable stock or bone broth
A handful of fresh coriander/cilantro
Step 1
Soak rice and dal overnight and wash and drain until water runs clear.
Prep and chop all ingredients.
Step 2
Set the Instant Pot to saute mode and add ghee. Once it heats, add fresh ginger & garlic. Next, Spice mix and Saute for a few seconds
Step 3
Drain all the water from the rice and dal. Add it to the Instant Pot along with additional vegetables.
Step 4
Add 1.5 cups of water, vegetable stock or bone broth and give it a good mix. Secure the lid and pressure cook on the low setting for 10 minutes.
Step 5
Do a natural pressure release and open the lid. Mix well and serve warm.
Top with coriander, you can also top it with fresh lemon juice just before serving.
