Season Stir-Fry

This veggie stir-fry is the perfect go-to meal when you want something quick, simple, and full of flavour. It starts with a base of freshly cooked turmeric rice and is paired with a colourful medley of vegetables such as zucchini, yellow squash, carrots, green beans, broccoli, onion, and garlic, all sautéed in nourishing ghee and spice mix. A touch of fresh ginger and garlic adds an extra layer of warmth and aroma. It's light, vibrant, and incredibly satisfying, a healthy, wholesome dish that comes together in no time!

Preparation Time:
10 Minutes

Ingredient

1- 3 tsp Ghee

Spice Mix (½ tsp ground coriander, cumin, fennel, ginger, and turmeric)

½ Cup White Basmati Rice

2 Cups of Vegetables: zucchini, yellow squash, carrots, green beans, & broccoli (Use the vegetables mentioned, or substitute with any others you have available.)

1-2 inches fresh ginger & garlic, grated or sliced

Top with coriander, you can also add fresh lemon juice on top just before serving.

Step 1

Start by cooking your rice, giving it a good rinse beforehand or soak overnight to remove excess starch. For extra flavour, you can use vegetable or bone broth instead of water to cook in. Add in ½ tsp of Turmeric as water starts to boil.


Step 2

While the rice cooks, prep your vegetables, chop them to your preferred size. Once ready,

Heat a wok or large frying pan over high heat and add a 2-3 teaspoons of ghee.

Toss in the ginger and garlic, cooking for about 30 seconds to a minute, just until fragrant.


Step 3

Add in about 2 heaping cups of vegetable mixture to the pan. Stir frequently, gradually incorporating the ghee and spice mixture to evenly coat everything.


Step 4

Once the veggies are tender, remove from the heat, add the Turmeric rice and serve warm.

Optional: You can top with lemon juice & coriander.
